To celebrate the season of love, I’ve got a delicious recipe for you to make for your loved one…or for yourself because, let’s face it, we need to love ourselves first before we can love others 🥰
Red Velvet Cupcakes
With Cream Cheese Frosting
Serves: 24 cupcakes
Ingredients:
- 2 ½ cups Plain Flour
- 1 tsp Baking Powder
- 2 tbls unsweetened cocoa powder
- 50ml Red Food Colouring
- 120g Butter—room temperature
- 1 ½ cups Caster Sugar
- 2 Eggs—room temperature
- 1 tsp Vanilla Extract
- 1 cup Buttermilk—room temperature
- 1 tsp White Vinegar
- 1 tsp Bi-Carb Soda
Cream Cheese Icing
- 250gm Cream Cheese—softened
- 125gm Butter—softened
- 4 tbls Thickened Cream
- 2 tsp Vanilla Extract
- 4 cups Icing Sugar
Method:
- Preheat oven to 180°C. Line cupcake trays with cupcake wrappers.
- In a small bowl combine cocoa and red food colouring to form a paste and set aside.
- Use an electric mixer to cream butter and sugar until light and fluffy—approx. 3 minutes.
- Add eggs one at a time, beating well after each. Add vanilla and red cocoa paste, mixing well and scraping the sides of the bowl frequently.
- Fold one third of flour into mixture followed by half the buttermilk. Add second third of flour followed by buttermilk and finally add last third of flour making sure to combine well.
- In a small ramekin or bowl combine bi-card soda and white vinegar. Add to the batter and mix well.
- Divide between cupcake papers being careful not to overfill.
- Bake for 15 – 20 mins or until cupcakes spring back when lightly pressed in the middle.
- Remove from oven and cool completely.
Cream Cheese Icing
- Combine cream cheese and butter in a bowl and beat with an electric mixer until light and creamy—approx. 5 mins
- Add cream, vanilla and icing sugar and mix on low speed until well combined.
- Beat on high speed for a further 5 mins. Refrigerate until firm enough to pipe.
- Pipe onto cupcakes to serve.

This book is one of my earlier ones so it’s a little rough around the edges and probably has a few typos in it, but I have to say it’s one that I love. It’s angsty and a little dark, but I love Cole and Darcy and their journey from friends to lovers.
